Double Chocolate Raspberry Dessert Waffles
Are you obsessed with the new Jessica Jones show? I’ve only made it through two episodes, but I’m hooked. It’s so rare to see such a badass female character in a superhero role, so when I see one, my eyes are glued to the screen. Jones is fierce, strong, and vulnerable at the same time, making her character so complex and well-rounded. If I didn’t have to pay rent I think I would be holed up in my apartment for days watching this show.

I’m so excited by the fact that more mainstream TV shows are adopting feminist themes that it makes me want to jump around the apartment and throw my hands up with joy. It’s no fun to watch shows where you can’t relate to the characters, and I previously counted on Shonda Rhimes for bringing all that feminism to the table, but Netflix is really stepping up their game with OITNB and Jessica Jones!

But enough about TV. There are dessert waffles here, after all.

Dessert waffles have been on my list for a while, and the only reason why I shied away from them is because I’m a little bit lazy and don’t like to stand at the waffle iron while each individual waffle is made. If you can get past that (it’s tough, I know) then you can make a kick-ass dessert that’s a little unexpected but positively delightful.

Each waffle has a deep chocolate flavour, one that can be made even deeper by adding a little cocoa powder, if you prefer dark over milk chocolate. With warm raspberry jam dripping off a cloud of chocolate whipped cream, the sprinkle of icing sugar on top is quite literally the icing on the cake.

Since these are a dessert (though I won’t judge you in the slightest for making these for breakfast) a little goes a long way. Half a waffle was enough for an after dinner treat for myself, but I’d certainly want a whole one for my first meal of the day. You can also make these dessert waffles ahead of time, including the chocolate whipped cream, and store everything in the fridge. When it’s time to “dish up” (apparently this is a phrase only my family uses…is it true?) just pop the waffles on a baking sheet and turn the broiler on for a few minutes. They’ll be crisped up, warm, and ready to serve. Enjoy :)

Ingredients
Waffles
  • 1½ cups flour
  • 1 tsp baking powder
  • ¼ cup cocoa
  • ¾ cup sugar
  • ½ cup whole milk
  • 1 tsp vanilla
  • 2 large eggs
  • ¼ cup vegetable oil
Chocolate Whip
  • 1 cup whipping cream/heavy cream
  • ¼ cup cocoa powder
  • ½ cup sugar
Instructions
  1. Preheat the waffle iron to high. In a mixing bowl, sift together the flour, baking powder, cocoa, and sugar. Add the milk, vanilla, eggs, and oil and whisk to combine until there are no lumps.
  2. Pour ¼ cup of batter (per waffle) onto the waffle iron. Repeat with the remaining batter.
  3. For the whip: In a chilled bowl, add the whipping cream and begin mixing on low until the cream becomes frothy and slightly thicker. Add the cocoa and sugar and continue mixing on medium until light and fluffy (about 5 minutes).
  4. Microwave the raspberry jam for about 30 seconds, or until runny. Scoop some whipped cream onto each waffle and drizzle with jam. Sandwich the waffles, or serve open faced.
Notes & Substitutions
This recipe can serve anywhere from 6 people (waffle sandwiches) to 12 people (open faced waffles).
